Kelly Ripa adores this millennial food as ‘staple’

Kelly Ripa might not be in her thirties, but the 51-year-old definitely eats like a millennial. The talk show queen and Persona Nutrition face is known for her tiny waist and super-healthy lifestyle, and she’s opened up to dish on everything she eats. Kelly, who made pandemic headlines for revealing she’s alcohol-free, has also revealed what lands on her plate, this via a Harper’s Bazaar food diary offering tons of details.

Kelly Ripa Shares Her Food Diary

Scroll for a photo. The mom of three, who comes with an elaborate coffee routine and a morning Starbucks on-set, spoke fondly of the one food all millennials can relate to. It’s avocado on toast.

“The avocado toast kick of 2015 to 2017 was two years where avocado toast was pretty much the foundation of my diet,” she told HB. “And I had it with just about every meal. Sometimes, I would fry an egg and add that on top. Sometimes, a piece of cheese would accompany the avocado toast. But the avocado toast was a real staple of my diet.”

Kelly, up early to welcome Americans Monday to Friday on daytime television, also revealed her breakfast – per the magazine, mixed “almond butter with cinnamon to top slices of green apples. “I eat that like a porridge, if you will,” Kelly said. The bubbly blonde, who has been making COVID headlines for her home workouts and eventual returns to the studio for cardio training, also eats a “microfoods” salad for lunch.

The former sitcom star dished on the big salad as she spoke to the Persona Nutrition brand she fronts – Kelly wrote:

“Every day, I have a big salad of microgreens, chickpeas, tomatoes, avocado and toasted nuts drizzled with olive oil and lemon juice. When it’s time for a snack, I skip the sweets and go for berries and nuts—usually pistachios, almonds, or cashews. These foods keep me full and feeling good throughout the day: So simple, so healthy, so delicious!”
